Elderflower Cordial



Makes 2 x 500 ml bottles
Ingredients
· 25 – 30 Elderflower heads
· 1Kg Granulated Sugar
· 25g Tartaric acid (I think you can substitute citric, but I’ve never tried)
· 1 large Lemon
· 750ml water
Preparation method1. Rinse the heads and shake gently. Snap off thick stems
2. Put the heads into a large pan and sprinkle with sugar and tartaric acid
3. Peel the lemon rind into thin strips (avoid the bitter white pith), and add it to the pan with the lemon juice.
4. Boil the water and pour over, stir
5. Cover loosely with a tea towel and leave for 24 hours. Stir occasionally’
6. The sugar should be dissolved by now. Strain through a muslin lined collider into a clean bowl.
7. Decant into bottles and store in the fridge for up to 3 months

Although this doesn’t last once the bottle is open, I have managed to keep some for 1 year. Put into a flip-top bottle that has been sterilized. Seal the bottle and refrigerate.
