British Banger
This is the nearest to a good old banger.
Ingredients:
1kg pork loin
600g pork fat
150g breadcrumbs
100ml water
20g salt
6g pepper
3g dried sage
3g dried thyme
3g mace
2m of hog casings soaked and washed inside and out.
Method:
Mince the pork and either mince the fat ( do it very cold to stop
it smearing)or chop it into very small pieces.
I sometimes freeze it and grate the frozen pork.
Add all the dried materials and then make a paste with water for
stuffing.
You will have to judge if you need more or less water.
