Richly Spiced Plum Chutney
Ingredients:1Kg Plums,
3 Onions
100g dried Cranberries or Raisins
1 Tablespoon finely grated Ginger
1 Tablespoon Ground Cumin
1 Tablespoon Paprika
1 Teaspoon Chilli Flakes
500g Muscovado sugar
750ml Red winePreparation:
Put all ingredients except sugar into a large stainless steel or non reactive pan and stir well.
Bring to boil, reduce the heat and cover and simmer for 10 minutes until plums are tender.
Stir in the sugar and 2 teaspoons of salt and keep stirring until it has dissolved.
Boil the chutney for 20 to 30 minutes uncovered, stirring occasional to prevent it sticking to the bottom of the pan.
Continue until mixture is thick and pulpy.
Decant into sterilised jars and put lids on when chutney is cold.Store at least two weeks before eating.
Will keep for up to 6 months in a
cool dark placed.
